Pomegranate Molasses Roasted Vegetables
Ingredients
- 4 cups mixed vegetables carrots, sweet potatoes, Brussels sprouts, etc., chopped
- 1/4 cup pomegranate molasses
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine pomegranate molasses, olive oil, balsamic vinegar, salt, and pepper.
- Add the mixed vegetables to the bowl and toss to coat.
- Spread the vegetables on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes or until tender and caramelized.
- Serve as a side dish or over a bed of quinoa or couscous.
