Ingredients

2 ripe bananas, mashed

1/3 cup creamy peanut butter

1/4 cup honey or maple syrup

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped peanuts (optional, for topping)

Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    2. In a large mixing bowl, combine the mashed bananas, peanut butter, honey or maple syrup, granulated sugar, melted butter, egg, and vanilla extract. Mix until smooth and well combined.

      3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

        4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

          5. Pour the batter into the prepared loaf pan, spreading it out evenly.

            6. If desired, sprinkle the chopped peanuts over the top of the batter for added texture and crunch.

              7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.

                8. If the top of the bread starts to brown too quickly, you can loosely cover it with aluminum foil halfway through baking.

                  9. Once baked, remove the banana bread from the oven and allow it to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

                    10. Slice the peanut butter banana bread and serve it warm or at room temperature.

                      11. Enjoy your delicious homemade peanut butter banana bread with a spread of additional peanut butter or your favorite toppings!

                        Notes

                        • For added sweetness, you can sprinkle some additional sugar on top of the bread before baking.
                        • Store leftover banana bread in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
                        • This banana bread also freezes well. Wrap individual slices or the whole loaf tightly in plastic wrap and foil before freezing. Thaw slices as needed at room temperature or reheat in the microwave.
