Pomegranate Molasses Roasted Vegetables

Ingredients
  

  • 4 cups mixed vegetables carrots, sweet potatoes, Brussels sprouts, etc., chopped
  • 1/4 cup pomegranate molasses
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine pomegranate molasses, olive oil, balsamic vinegar, salt, and pepper.
  • Add the mixed vegetables to the bowl and toss to coat.
  • Spread the vegetables on a baking sheet lined with parchment paper.
  • Roast for 25-30 minutes or until tender and caramelized.
  • Serve as a side dish or over a bed of quinoa or couscous.
